Cilantro Lime Crema

This recipe is unintentionally vegan. Technically you COULD use 1/2-3/4 cup of yogurt or sour cream or mayo or a combo of the three for this but I think the texture with the cashews wins out.

Ingredients: 

  • ¾ cup raw cashews

  • 2 limes

  • 2 cloves garlic

  • 1 bunch cilantro stems

  • Salt

  • Garlic pow (yes both fresh and dried)

  • Maple syrup 

  • optional: 1 jalapeno or serrano pepper if you like spice

Instructions: 

  1. Either soak cashews overnight or, if you’re like me, you forgot to do that so just pour about a cup of boiling water over the cashews for about 20 minutes. I like to do this in the blender so I don't dirty another dish. 

  2. Zest two limes

  3. Peel and grate two cloves of garlic 

  4. Roughly chop the cilantro stems

  5. De-stem and de-seed pepper if using

  6. Add lime zest, lime juice, garlic, cilantro, jalapeno or serrano if adding, a good pinch of salt and garlic pow, and a glug of maple syrup to the high speed blender with the soaked cashews and the water. Blitz until completely smooth. Taste and adjust salt level as needed.
