Cilantro Lime Crema
This recipe is unintentionally vegan. Technically you COULD use 1/2-3/4 cup of yogurt or sour cream or mayo or a combo of the three for this but I think the texture with the cashews wins out.
Ingredients:
¾ cup raw cashews
2 limes
2 cloves garlic
1 bunch cilantro stems
Salt
Garlic pow (yes both fresh and dried)
Maple syrup
optional: 1 jalapeno or serrano pepper if you like spice
Instructions:
Either soak cashews overnight or, if you’re like me, you forgot to do that so just pour about a cup of boiling water over the cashews for about 20 minutes. I like to do this in the blender so I don't dirty another dish.
Zest two limes
Peel and grate two cloves of garlic
Roughly chop the cilantro stems
De-stem and de-seed pepper if using
Add lime zest, lime juice, garlic, cilantro, jalapeno or serrano if adding, a good pinch of salt and garlic pow, and a glug of maple syrup to the high speed blender with the soaked cashews and the water. Blitz until completely smooth. Taste and adjust salt level as needed.
