Corn Chowder with Turnips!

Ingredients: 

  • 1 yellow onion

  • 2 celery stalks

  • 3-5 garlic cloves

  • 1 lg turnip or two small

  • 1 lg carrot

  • 1 sweet potato (white flesh)

  • 1-3 corn cobs (or one bag frozen corn)

  • Cream (milk based or vegan doesn’t matter really)

  • Butter or oil

  • Broth

  • Salt

  • Pepper

  • Paprika

  • Onion pow

  • Garlic pow

  • Red pepper flakes

  • Cayenne 

Instructions: 

  1. Cut all the veggies except the corn up to desired size. I personally like to cut everything pretty small so it matches the size of the corn kernels

  2. Add butter or oil to a large pot and add onion on medium heat for several minutes until beginning to soften. 

  3. Add celery and garlic and cook another 3-5 minutes before adding the carrot, turnip and sweet potato

    1. One thing I have definitely done is roast the root veggie items at 400* with the spices on them and add them in at the very very end so they have that roasted flavor but you can add them straight to the pot too! 

  4. Cook corn by desired method and cut off the cob and add to pot

    1. I personally like to be fancy and in the summertime grill my corn on the cob so it has a smokey burny grilled kind of flavor. But you can just boil the corn in water if you like. Or roast the cob under the broiler until it's just browned. 

  5. Add all spices at this time and mix well before adding broth

  6. Add just enough broth to cover the items in the pot usually a couple cups of broth

  7. Simmer for 20 minutes or until root veggies are soft in the middle (if you aren’t roasting them)

  8. Add cream and simmer just a couple minutes longer and taste adjusting spices and adding anything you find lacking.
