Dashi: Vegan and Not

Dashi is the liquid base for many japanese foods and usually the base for miso soup as well. It is a form of broth with a mild flavor.

Not vegan:

  • 1 cup Bonito dried shrimp flakes

  • 2 oz kombu

  • 6 cups filtered water

Vegan: Ingredients:

  • ¼ cup of soy sauce or tamari

  • 2oz of kombu

  • 1 handful dried shiitake mushrooms (10-12 caps)

  • 6 cups filtered water

Instructions:

  1. Boil water

  2. In separate heat safe bowl put other ingredients

  3. Pour boiling water over ingredients and make sure everything is fully submerged.

  4. Let sit for 20 minutes

  5. Sieve broth to remove micro particles

  6. If using right away you can now reheat the broth.
