Morel and Garlic Scape Salad With Pistachio Spinach Puree

Pistachio Spinach Puree:

Ingredients: 

  • 1/3 cup Fresh lemon juice                                                       

  • 1 Shallot, chopped    

  • 1 tablespoon Red wine vinegar

  • 1 tablespoon Honey

  • 1 tablespoon Dijon mustard

  • ¾ teaspoon Salt and pepper

  • ¾ cup Pistachios

  • 5 ounces Fresh spinach

  • 1 cup Olive oil

Instructions

  1. Put all ingredients into a high speed blender adding small amounts of water as needed to get to consistency you like. I like mine fairy thick so I added just enough so the blades could catch everything. 

Sauteed Morel Mushrooms: 

Ingredients: 

  • As many morel mushrooms as you care to buy/have access to

  • 2 shallots

  • Butter or vegan butter

Instructions: 

  1. First clean the mushrooms: dunk them in water for 10 minutes, drain and repeat two more times. Make sure to rinse mushrooms and colander between drainings or all the dirt will go back on the mushrooms

  2. Melt butter in a pan and add shallots for about a minute before adding the morels

  3. Sautee the morels until butter is absorbed and mushrooms are softened to your liking, 8-12 mins

Roasted garlic scapes: 

Ingredients: 

  • Olive oil 

  • Garlic scapes

  • Salt

  • Pepper

  • Garlic pow

  • Onion pow

  • Paprika

Instructions: 

  1. Preheat oven to 400*

  2. Cut ends off garlic scapes and either leave them whole INCLUDING THE FLOWER! Or cut them into manageable bite size pieces about 3” long

  3. Drizzle olive oil and dust seasonings over and toss

  4. Roast for 10 minutes and check seeing if they need 5 more mins. They brown quickly so watch them. 

Spiced croutons: 

Ingredients: 

  • Fresh crusty bread (I prefer to get an onion bread or rosemary bread etc here for extra flavor but plain is fine)

  • Olive oil or melted butter

  • Salt

  • Pepper

  • Garlic pow

  • Onion pow

  • Cayenne

  • Cinnamon 

Instructions: 

  1. Preheat oven to 400* 

  2. Cut bread into 1” cubes or size to preference

  3. Drizzle oil and dust spices over bread. I am usually more liberal with the salt/pep/garlic/onion and more sparing with the cayenne and cinnamon, but you do you whatever spice amounts you like. 

  4. Bake for 10 minutes and check seeing if they need 5 more minutes. 

**Recommend doing these and the garlic scapes on different pans just in case one of them is done before the other. 

Arrange Salad: 

Ingredients: 

  • Pea shoots

  • Arugula microgreens 

Instructions: 

  1. Spread a healthy helping of spinach puree on the bottom of the plate. 

  2. Top with a healthy helping of pea shoots and arugula microgreens. 

  3. Top greens with desired amount of mushrooms, garlic scapes and croutons and enjoy!
