Quick Pickled Onions

Ingredients:

  • 1 red onion

  • Red wine vinegar

  • Salt

Instructions:

  1. Slice onion into desired size pieces. I prefer to slice them very thin lengthwise not crosswise

  2. Put onions in a clean bowl and thoroughly salt letting sit for about 10 minutes

  3. Put just enough vinegar into bowl to cover onions and let sit another 10-15 mins or longer. These will keep in a jar or other container for several weeks as long as they stay uncontaminated.
