Quick Pickled Onions
Ingredients:
1 red onion
Red wine vinegar
Salt
Instructions:
Slice onion into desired size pieces. I prefer to slice them very thin lengthwise not crosswise
Put onions in a clean bowl and thoroughly salt letting sit for about 10 minutes
Put just enough vinegar into bowl to cover onions and let sit another 10-15 mins or longer. These will keep in a jar or other container for several weeks as long as they stay uncontaminated.
