Quick Pickled Onions
Ingredients:
- 1 red onion 
- Red wine vinegar 
- Salt 
Instructions:
- Slice onion into desired size pieces. I prefer to slice them very thin lengthwise not crosswise 
- Put onions in a clean bowl and thoroughly salt letting sit for about 10 minutes 
- Put just enough vinegar into bowl to cover onions and let sit another 10-15 mins or longer. These will keep in a jar or other container for several weeks as long as they stay uncontaminated.
