Roasted Portobello Mushrooms
Ingredients:
Portobello mushroom
Oil
Salt
Pepper
Onion pow (optional)
Garlic pow (optional)
Paprika (optional)
Instructions:
Preheat oven to 400*
Line a baking tray with parchment paper or alum foil
Slice mushrooms fairly thin but not too thin, maybe ¼” thick slices
Lay out on the sheet in a single layer
Take a basting brush and brush oil on both sides of the mushroom pieces
Sift each spice evenly over the mushrooms in a single pass, careful not to over salt
Bake for 10 minutes on each side
If they are not done enough for you add an additional 5 minutes
Notes:
You can just put salt and pepper and that’s enough! Put your own fav seasonings! Experiment.
Sometimes if I cut the pieces too thin they need less time so check at the 10 minute mark to see where you’re at.

You want them to be browned and have most of the moisture cooked out of them but not to the point where they are burnt.
These are excellent additions to soups, to salads, to congee, to basically all dishes that require a “meaty” texture.
If you overcook them and they are less meaty and more crispy they are kind of like mushroom chips and make a great snack!
