Ingredients list:

  • 1 cup Pearled Couscous

  • 3-4 tablespoons of Capers patted dry of brine

  • 3-4 cloves Garlic peeled and smashed

  • 1 Lemon (juice and rind)

  • Squeeze of Agave nectar (optional)

  • Several tablespoons of Olive oil

  • Salt

  • Pepper

  • Several handfuls of Arugula

  • 2-3 hard boiled eggs

  • Toasted nuts (type of nut optional)

  • Dried fruit (optional)

  • Fresh basil (optional)

Instructions:

  • Cook 1 cup couscous per directions and rinse with cold water, drain and set aside in a large bowl.

  • Meanwhile boil 2-3 eggs depending on how much salad you are making

  • Heat oil in pan with smashed garlic cloves and capers until capers are lightly browned

  • Mince browned garlic from pan and add oil, garlic and capers to couscous and mix well

  • Add squeezed lemon juice, lemon rind, agave nectar if adding, more oil if there wasn’t enough from the pan, salt, and pepper to taste to the bowl and mix well

  • Toast nuts if needed and add to bowl

  • Add dried fruit and chopped basil if you are adding them

  • Boil eggs and grate into bowl

  • Add several handfuls of arugula until ratio is to your liking

  • Toss all and serve!
