All Purpose Fish
Ingredients:
Fish of choice
1 Lemon
Kerrygold or other butter of choice
Salt and Pepper to taste
Instructions:
Cut fish into size pieces you want
If cooking as a whole fillet follow same instructions
Wash fish in cold water and pat dry with paper towels
or for zero waste, a no lint cotton tea towel
If the fish still has bones take a pair of clean kitchen needle nose pliers and pull them out carefully so as to not disrupt the appearance of the flesh too much.
Line a baking pan with aluminum foil
If avoiding aluminum parchment paper will also work splendidly
If fish has skin put skin side down so it's easier to slide a spatula between skin and flesh when serving
If you like skin, you can put skin side up and broil the skin for the last 2-3 minutes so the skin crisps up. Make sure you oil the pan underneath the flesh though or you will have stickage.
Place a pat of butter of choice right in the center of the fish
I personally like Kerrygold but any butter would work fine
(for larger pieces space the butter evenly every 2” or so apart)
Thinly slice a lemon and put several slices on top of the butter
Sprinkle salt and pepper on top of the lemon
Bake in the oven for 10-15 minutes @ 400*F
Cook time will vary depending on thickness of fish
Always start with less time and adjust from there
