All Purpose Fish

Ingredients:

  • Fish of choice

  • 1 Lemon

  • Kerrygold or other butter of choice

  • Salt and Pepper to taste

Instructions:

  • Cut fish into size pieces you want

    • If cooking as a whole fillet follow same instructions

  • Wash fish in cold water and pat dry with paper towels

    • or for zero waste, a no lint cotton tea towel

  • If the fish still has bones take a pair of clean kitchen needle nose pliers and pull them out carefully so as to not disrupt the appearance of the flesh too much.

  • Line a baking pan with aluminum foil

    • If avoiding aluminum parchment paper will also work splendidly

  • If fish has skin put skin side down so it's easier to slide a spatula between skin and flesh when serving

    • If you like skin, you can put skin side up and broil the skin for the last 2-3 minutes so the skin crisps up. Make sure you oil the pan underneath the flesh though or you will have stickage.

  • Place a pat of butter of choice right in the center of the fish

    • I personally like Kerrygold but any butter would work fine

    • (for larger pieces space the butter evenly every 2” or so apart)

  • Thinly slice a lemon and put several slices on top of the butter

  • Sprinkle salt and pepper on top of the lemon

  • Bake in the oven for 10-15 minutes @ 400*F

    • Cook time will vary depending on thickness of fish

    • Always start with less time and adjust from there
