Bahn Mi Bowls or Sandwiches

Ingredients:

  • French sandwich rolls (if having sandwiches)

  • Sriracha

  • Mayo

  • 2-3 Radishes

  • 1 Jalapeno

  • ½ Cucumber

  • 2-3 Green onions

  • 1 Lime

  • Cilantro

Meat:

  • Ground pork or other meat (jackfruit is a great meatless alternative)

  • 2 tablespoons Soy sauce or Tamari

  • 1 shake of Fish sauce (vegan fish sauce okay!)

  • 1-2 tablespoons Hoisin sauce, honey, agave nectar or other liquid sweetener of choice (depending on how sweet you like your meat)

  • 1 Serrano pepper

  • 2-3 cloves Garlic

  • 1 piece of Ginger maybe 1”-1 ½”

Quick Pickled carrot:

  • 1 lg carrot shredded, thinly sliced or julienned

  • ¼-½ cup Seasoned rice vinegar

  • 1 tablespoon Sugar

  • 1 teaspoon Salt

Instructions:

Quick Pickled Carrot:

  1. Shred, thinly slice or julienne the carrot and put in a bowl sprinkling salt over it and mixing until evenly coated with salt

  2. Mix sugar into rice vinegar in a jar and add the carrot

  3. Close the lid and shake so all parts of carrot are coated and let sit until ready to serve

Meat:

  1. Grate garlic and ginger and mince the serrano pepper, add all to a pan with a smidge of oil on medium low until fragrant

  2. Add meat to mix until completely cooked and starting to brown

  3. Add soy, fish, hoisin sauces until well coated.

Toppings:

  1. Thinly slice cucumber and radish (if you have a mandolin this would work great)

  2. Cut jalapeno into rounds if having

  3. Cut green onions into straws about 2-3” long and sliced down the middle

Build sandwich:

  1. Mix desired amount of sriracha into a couple tablespoons of mayo until completely mixed.

  2. Spread the mayo on the bread

  3. Add meat to sandwich

  4. Top with slices of radish, cucumber, jalapeno, green onions, cilantro, spritzed lime, pickled carrot and enjoy!

  5. If making this a bowl, make grain of choice or just on greens and add all the components in quantities you desire and enjoy!
