African Peanut Soup

Ingredients:

  • 6 cups veg or chicken broth

  • 1 medium red onion, chopped to size preference

  • 1-2” long peeled and grated fresh ginger

  • 4 cloves garlic, minced or grated

  • 1 teaspoon salt and pepper to taste

  • 1 bunch collard greens (or kale), ribs removed and leaves chopped into 1-inch strips

  • 1 cup unsalted peanut butter (chunky or smooth to choice)

  • 1 small can tomato paste

  • ⅓ cup Hot sauce, like sriracha (AKA rooster sauce)

  • 2 sweet potatoes peeled and chopped into small pieces

  • 1 bunch Fresh cilantro

Instructions

  1. In a stock pot add onion until semi translucent

  2. Add garlic and ginger for just a minute before adding the sweet potato

  3. Salt and pepper mixture and let soften for around 5 mins

  4. Add broth and let simmer for around 20 mins

  5. In a heat safe bowl add peanut butter, tomato paste and hot sauce, add several ladlefuls of hot broth which will help break down the peanut butter and whisk together until well mixed. Should be fairly thick still

  6. Mix that into the rest of the pot and check for thinness. If it is too thin for you then add more peanut butter using the same method.

  7. Last add the greens you have decided to add and simmer for another minute or so until just wilted

  8. To eat you can put this over rice if you like, you can eat it straight if you like

  9. Top with fresh cilantro, more hot sauce if you like it spicy and add fresh peanuts if you are into that.

  10. Note: occasionally i will add a can of coconut milk too for richness and to make it slightly thicker. That isn’t traditional but damn is it good.

***you may need to adjust the tomato paste/peanut butter/sriracha levels for desired thickness***
