Cauliflower Mac and Cheese

Ingredients: 

  • 1 head of Cauliflower

  • 1 onion (minced)

  • 3-4 cloves of garlic (minced or grated on a microplane)

  • 1 cup of Cream or Cashew Creme

  • 2 oz Cream Cheese or Plain Cashew Cream cheese

  • Sharp cheese of choice (optional)

  • 2 cups of macaroni noodles or other noodle of choice

  • Salt and pepper

  • 2 tbsp Dijon Mustard

  • Optional Toppings: 

    • French Fried Onions

    • Panko bread crumbs

    • Stale bread cubes 

Instructions: 

  1. Preheat oven to 350*

  2. Boil some water with salt in it

  3. Break the cauliflower into manageable sized pieces

  4. Blanch in boiling water for just a couple seconds

  5. Drain and put in a baking dish

  6. Boil more water for your pasta if adding

  7. Make pasta per boxes directions and add to dish with cauliflower

  8. In a pan over medium heat sweat some onions until just browned 

  9. Then add garlic for just a minute and add all to dish with pasta and cauliflower

  10. In a pot put the cream and the cream cheese and mix until well melted

  11. Add mustard, salt, pepper and extra sharp cheese if adding until melted/well mixed and take off heat

  12. Pour over the dish and mix well until everything is well coated and even in the dish

  13. Top evenly with desired toppings and bake for 45 minutes, check after 20 minutes to see if top is browning too much and cover with foil if so.
