Garlic Dill Crusted Halibut with Polenta and Baked Broccoli

Ingredients: 

  • Garlic

  • Dill

  • Lemon (zest and juice)

  • Mayo

  • Halibut

  • 1 part Polenta

  • 5 parts Water or broth 

  • 1 tablespoon Butter or oil

  • ½ cup or more Good melting cheese

  • 1 Broccoli head

  • Salt

  • Pepper

  • Paprika

  • Onion pow

  • Garlic pow

Instructions: 

  1. Preheat oven to 400*

  2. Put butter or oil in a pan with dry polenta for just a minute before adding the water or broth and simmer on medium low stirring pretty often to ensure that it doesn’t stick to the bottom of the pan or that a layer does not form on the top. 

  3. Simmer polenta until to desired consistency. I like mine fairly thick and somewhat gloppy. 

  4. Once desired consistency, add cheese if desired until fully mixed in and salt and pepper mixture. 

  5. Meanwhile mince the garlic and the dill

  6. Zest and juice the lemon

  7. Mix all above things together with several tablespoons of mayo and a sprinkle of salt until well mixed and not too thin

  8. Wash and debone fish, patting dry with paper towels or a reusable tea towel 

  9. Place fish on parchment paper or alum foil on a baking sheet

  10. Spread mixture over halibut in an even layer

  11. Cut broccoli into size pieces you like, don't throw away the stalk, skin the stalk and cut off the bottom part, the inside is very tender and delicious

  12. Put broccoli on lined baking pan with several glugs of oil and sift spices over broccoli

  13. Put broccoli in on bottom rack for around 15 minutes 

  14. After 15 minutes put the fish in and bake both another 15 minutes 

  15. If you like, broil the fish for just 1 minute to get a little more color on the topping

  16. If you aren’t happy with the crispness of the broccoli then broil that 1 minute at a time until broccoli is desired crispness but watch it carefully or it will burn!
