Dutch Baby
Ingredients:
3 eggs
½ cup flour
½ cup milk
1 tablespoon sugar
Just a touch of Vanilla extract maybe ½ teaspoon
Just a touch of salt maybe ½ teaspoon
4 tablespoons butter
Powdered Sugar
Fresh Lemon juice
Instructions:
Preheat oven to 475*
Mix eggs, flour, milk, sugar, vanilla and salt all together until very well blended. You can do this in a blender or by hand.
When oven is preheated put butter in a cast iron pan or an oven safe baking dish (though I will admit they come out much better in the cast iron)
Put pan in oven until butter is well melted and starting to bubble but NOT burn
Make sure butter lines pan for minimal amount of stickage later
Add batter to pan and spread evenly around using gravity
Bake for 20-25 minutes until edges are browned and the pancake has fluffed considerably
Turn off oven and let sit in the oven another 5 minutes.
Take out and let cool for a couple minutes before spritzing lemon juice and dusting powdered sugar all over it!
