Homemade Flatbreads

Ingredients: 

  • 1 packet active dry yeast (1 packet = 2 1/4 tsp)

  • 2-3 cloves garlic, grated finely

  • Pinch of Salt

  • 1/2 tsp sugar

  • 2 cups flour

  • 1 Tbsp olive oil (plus more for coating bowl)

  • 3/4 cup warm water

  • You can add a pinch of fresh herbs of choice to this as well for added zing. Rosemary works really well, fresh thyme or fresh oregano would work well. I find that fresh is better than dried here. 

Instructions

  1. Put yeast, garlic, salt, sugar, all-purpose flour, herbs if adding all in a large clean bowl and mix well with a spoon or a whisk

  2. Make a well in the dry ingredients and add a drizzle of olive oil and half the warm water. Stir, adding more water as needed until a dough forms. 

    1. Some people use a wooden spoon here, I like to use my hands because the next step is to:

  3. Knead until smooth and elastic just a couple minutes, adding more flour as needed to prevent sticking.

    1. I prefer to do this in the bowl but I know most people like to do this on a flat floured surface. You do you. 

    2. When you are happy with the consistency form dough into a ball. 

  4. Add a bit of oil to the bowl until just able to use hands to rub around dough ball 

  5. Cover with a damp towel or plastic wrap. Set in a warm place to rise for 1 hour.

  6. Once it has clearly risen, cut dough into evenly sized pieces depending on how big you want your flatbreads. 

    1. If you want them to be round at the end then form them into little round balls at this time before laying a damp towel on top to let rest a little longer. 

  7. Heat a cast iron skillet or a griddle pan to high heat. I’ve even done this on the BBQ! 

  8. One at a time on a lightly floured surface, roll each piece of dough out until fairly thin but not so thin that it will tear. They are likely to be irregular in shape unless you formed them into balls in step 6 and that’s okay! 

  9. Add a little oil to pan and lay down flatbread directly in the center of pan over oil.

  10. Don’t touch or flip or check or anything! for 2 minutes. Flip and cook for another 2 minutes on the other side. Repeat, adding more oil before starting a new one until all flatbread is cooked.

  11. Enjoy immediately as they are best fresh.
