Huevos Rancheros

For this photo I only used green peppers of various kinds so it ended up being pretty spicy too. Feel free to use whatever combination of peppers you have on hand/like. This is also served over fried potatoes with added chorizo as suggested topped with a fried egg, cheese and sour cream. Vegan? Don’t add those things!

Ingredients:

  • 1 red bell pepper (feel free to use whatever color you happen to have on hand or prefer!)

  • 1 yellow bell pepper (feel free to use whatever color you happen to have on hand or prefer!)

  • 1 jalapeno (or green bell pepper if you don't want it spicy)

  • 1 poblano pepper (take seeds out if you don't want it spicy)

  • 1 onion of choice

  • 3-5 cloves of garlic

  • 1 can of crushed tomatoes (can also add 2-3 medium fresh tomatoes, or around 20 cherry tomatoes if you like)

  • 1/4 cup or just a heafty drizzle of sweetener of choice (sugar, maple syrup, agave nectar, honey, etc)

  • Pinch of salt to taste preferences

  • Glug of olive oil

  • Optional toppings/additions: cheese, cilantro, fried egg, breakfast meat, fried potatoes, sour cream, etc.

Instructions:

  • Mince everything to desired size

  • Add all the peppers, onion and garlic to a pan on medium heat with a glug of olive oil

  • When they just start to saute, cover the pan and let it simmer, stirring occasionally, until it gets jammy

  • When everything is looking good and jammy add the remaining ingredients (crushed tomatoes, sweetener and salt)

  • Continue to cook uncovered until tomatoes are well incorporated and liquid has evaporated to your liking

    ***I like to serve mine over fried breakfast potatoes with a fried egg on top. Sometimes I will also add chorizo or another breakfast sausage if I have them lying around or am generally just feeling fancy. My wife likes hers with added cheese and sour cream.***
