Polenta Breakfast Bowl
Have leftovers? Trying to meal prep?
Make it simpler by making lots of eggs and paring it down! Have a side of toast. Add black beans instead of eggs. There’s no one way!
Ingredients:
1 cup Polenta
5 cups water
Bacon (amount to your liking) (optional)
Butter or oil
1 cup of good melting cheese of choice
Eggs (amount to your liking and how many guests)
Handful of mustard greens, radish greens, Arugula or other greens/microgreens
Salt
Pepper
Onion pow
Garlic pow
Paprika
Cayenne
Cooking Instructions:
Make bacon in pan until crispy (or desired done-ness)
Remove from pan and drain on paper towels
Leave grease in pan, if not using bacon then use several tablespoons of butter or oil
Add 1 part polenta to 5 parts water until well mixed and not clumpy
Simmer until to desired consistency. I like mine fairly thick and somewhat gloppy.
Once desired consistency, add cheese if adding, until fully mixed in and salt and pepper mixture.
Meanwhile soft boil eggs or poach eggs.
Chop bacon into pcs for easier consumption
Braise greens, if using hardier greens like mustard greens or radish greens, or simply add raw as a topping if delicate like arugula or microgreens.
To braise: put greens into a hot pan with a small amount of fat of choice (bacon fat, butter, oil, etc)
when they are browning slightly and reducing turn off heat and put a cover over the pan so they continue to steam until fully wilted.
Ladle polenta into bowl and sprinkle bacon over the top, place egg, and add greens. Season the top of bowl with just a pinch of each seasoning as listed above, or use your own favorite spices!
