Mango Sticky Rice

Ingredients: 

  • 1.5 cups Short Grain White Sushi Rice 

  • 1 can unsweetened Coconut milk

  • ⅓ cup Sugar

  • 1 teaspoon salt

  • Black sesame seeds

  • 1 ripe Mango 

Instructions: 

  1. Rinse rice several times in a cook safe metal sieve

  2. Soak rice in cold water for at least an hour in the sieve so you don't have to keep transferring the rice to different receptacles

  3. Steam rice for 30 mins in sieve over a pot of water so the rice is not submerged in the water but just above it. I personally put a teacloth (or other cotton non fibrous cloth) between the rice and the lid of the pot while steaming. 

  4. Meanwhile in a saucepan put coconut milk, sugar and salt and warm through until sugar is completely dissolved and not grainy anymore. 

  5. Put rice and coconut milk mixture in a bowl and let sit for 30-45 mins or longer, the rice will absorb the coconut milk mixture. Be patient. It will happen. 

  6. While rice is sitting, peel and slice mango and chill 

  7. To assemble put rice as the base, top with mango and sprinkle black sesame seeds over the top.
