Forbidden Rice Tabbouleh

Ingredients:

  • 1 cup Forbidden black rice

  • 1 small handful Almonds

  • 1 can Chickpeas

  • 1 large handful of herbs: Cilantro, parsley, mint, other herbs of choice

  • 2-3 Green onions

  • 4-5 Dates

  • Olive oil

  • Lemon juice from 1 small lemon or ½ large lemon

  • Salt

  • Pepper

  • Garlic pow

  • Onion pow

  • Paprika 

Instructions: 

  1. Rinse rice and cook as directed on pkg and then let cool completely before mixing everything else in. 

    1. On stove: 1:2 rice:water ratio. Let water and rice boil and then lower to medium low and cover with lid for around 40 mins. 

  2. Slice or roughly chop almonds and toast in a pan until just browning, DO NOT burn they will taste acrid 

  3. Open and rinse chickpeas, patting dry with a cloth

  4. Chop herbs, green onions and dates into small pieces around the same size as each other

  5. Put everything in a bowl adding the oil, lemon juice and spices and mixing very well
