Forbidden Rice Tabbouleh
Ingredients:
1 cup Forbidden black rice
1 small handful Almonds
1 can Chickpeas
1 large handful of herbs: Cilantro, parsley, mint, other herbs of choice
2-3 Green onions
4-5 Dates
Olive oil
Lemon juice from 1 small lemon or ½ large lemon
Salt
Pepper
Garlic pow
Onion pow
Paprika
Instructions:
Rinse rice and cook as directed on pkg and then let cool completely before mixing everything else in.
On stove: 1:2 rice:water ratio. Let water and rice boil and then lower to medium low and cover with lid for around 40 mins.
Slice or roughly chop almonds and toast in a pan until just browning, DO NOT burn they will taste acrid
Open and rinse chickpeas, patting dry with a cloth
Chop herbs, green onions and dates into small pieces around the same size as each other
Put everything in a bowl adding the oil, lemon juice and spices and mixing very well
