Quinoa Broccoli Bowl with Chicken and Egg
Ingredients:
Quinoa
Broccoli (florets AND stems)
Onion (choice of color)
Chicken thighs
Olive oil
salt/pep/garpow/onionpow/paprika
Eggs
Instructions:
Make desired amount of quinoa:
1|2 ratio quinoa|water,
wash the quinoa,
boil the water,
add the quinoa,
cover and let simmer until almost all the water has evaporated (around 8-10 mins),
turn off heat
leave cover on letting the quinoa steam the rest of the way
Fluff with fork and enjoy!
Break down broccoli into desired size pieces making sure to keep that tasty tender stem but remove the thick outer layer of it
Break down onion into vertical slices
Break down chicken into desired size pieces I went for 1x1 cubes
In a pan put a tablespoon of olive oil and add onion for around 8 mins maybe 10
Add broccoli and spices and mix well to combine so everything cooks evenly. Cook for the amount of time it will take to cook the chicken or until the broccoli is the tenderness you personally like. I like mine pretty al dente but my wife likes hers soft so you choose!
In a separate pan put one more tablespoon of oil and chicken sifting spices evenly over chicken and cooking until they are browned all around
When chicken is done remove from pan and use the same pan to fry an egg to go on top. A poached or soft boiled egg is also welcome here! But personally I like a runny egg for this dish.
Assemble dish: quinoa in the bottom, veggies on top, add chicken and top with egg. Finish with a pinch of good quality salt to finish and hot sauce if you like it. Enjoy!
