Thai Soup

Ingredients:

  • 2-4 cups broth of choice

  • 1 handful Green beans topped and tailed and cut into desired size pieces, I like around 2.5-3” long pieces

  • ½ yellow onion sliced thin

  • 2-3 garlic cloves grated in a zester

  • At least 1” knuckle of ginger grated in a zester

  • 1 platoon Mushrooms of choice (fresh shiitake, button, or mini bellas work best) quartered or chopped into desired size pieces of mushroom

  • 1 handful Chili lime Cashews (Trader Joes sells these) (optional topping)

    • Cashews

    • Sprinkle of Chili pow

    • Juice and zest of 1 Lime

    • Sprinkle of Dried cilantro

    • Sprinkle of salt

  • Hot chili oil or sesame oil

  • 1 serrano pepper, 1-3 thai chili peppers or 1 tbsp red pepper flakes or a loose handful of dried red chilli pods

  • White fish of choice (optional)

    • Could use tofu if desired

  • Salt, pepper, onion powder, garlic granules

  • Green onions chopped (optional topping)

  • Hot sauce such as sriracha (optional topping)

  • Soft boiled egg (optional topping)

Instructions:

  • Lightly saute green beans, garlic and ginger in a tablespoon of hot chili oil or sesame oil until beans are just browned

  • Meanwhile heat broth in a soup pot with peppers, onion and fish cut roughly into pieces sized as you like for around 10 minutes until fish is cooked through

    • If having tofu then do not add until the end of the soup or the tofu will break apart and separate

  • Add spices and simmer another 10 minutes

  • Add mushrooms and green beans to the broth and simmer another 10-15 minutes until mushrooms are soft

    • Add tofu at this time if adding so it heats through

  • If making spiced cashews from scratch simply toss nuts in the ingredients listed and then toast until JUST toasted, watch them bc they could burn

  • You can spoon this soup over rice or rice noodles if you like or just eat as a soup

  • Top with green onions, hot sauce, soft boiled eggs, and chili lime cashews or regular cashews if you don't like or don't have a TJ’s around you but don't add them until you are about to eat the dish or they will get soft. You want them to stay nice and crunchy.
