Breakfast Burritos

Ingredients: 

  • Potatoes

    • Veg oil

    • Salt

    • Pepper 

    • Garlic pow

    • Nonstick pan

  • Meat of choice Steak/Bacon/Chorizo etc. (optional)

  • Onions

  • Eggs

  • 10” or larger flour Tortillas 

  • Queso

    • Cheddar cheese

    • Cream cheese

    • Milk

    • Poblano pepper 

    • Onion

    • Garlic

  • Optional additional toppings:

    • tomatoes

    • salsa

    • avocado

    • guac

    • green onions

Instructions: 

  • Cut potatoes into desired size pieces, I like mine around ½” square

  • Put potatoes into a non-stick pan adding a glug of veg oil 

  • Let potatoes sit on medium to medium high for five minutes without touching them.

  • When five minutes is up you can stir them until the crispy bottoms are mixed in and other parts of the potatoes are starting to brown (10-20 minutes depending on pan type and heat)

  • Cook another 10-15 minutes stirring every five minutes until you are happy with the crispiness and they are obviously cooked through (should be able to stick a fork in them)

  • Do not add any seasonings until the very end. Then add a sprinkle of each being careful with the salt or with the bacon and chorizo it could get too salty pretty quickly (if omitting meat then go ham! and by ham I mean crazy with the spices)

  • In a separate pan make bacon first in a nonstick pan until crispy on the outside and drain on paper towels

  • Add onions to bacon grease until semi translucent then add chorizo, about five minutes

  • Cook chorizo until well browned and take off heat and set aside

  • Mince onion, poblano pepper and onion 

  • In a pot put a tiny bit of oil and minced veggies until they are very very soft. This could be around 10 minutes so best to start this around the same time as the potatoes

  • Add cream cheese until it starts to melt (3-5 mins)

  • Add milk in 1/4 cup quantities until to desired consistency (thin enough to pour or pour off of a spoon)

  • When you like the consistency add cheddar cheese until well melted in, this will thicken your queso slightly so keep that in mind and add more milk if needed

  • When potatoes are done and chorizo is done and bacon is done mix all together in one pan

  • In a separate bowl whisk eggs together as if scrambling 

  • Add eggs to the potatoes mixture and DO NOT STIR just put the lid on (can also cook the eggs separately)

  • lower the temp to medium low and let sit 3-5 minutes until eggs are solidifying

  • At this time you will take a spatula and turn the egg over in small sections until the entire pan has been flipped 

  • Turn off the heat and put the lid back on. 

  • Let sit until you are satisfied that the eggs are cooked through. Probably a minute or so. 

  • Keep another pan warming with a tiny bit of oil

  • Fill tortilla with the mixture and fold into a burrito

    • There is some controversy on this. The best way is to fold either short (hamburger end) end over itself and then fold one side of the hotdog end in, tightly snugging all the innards before continuing to roll the rest of the tortilla closed. 

  • Place rolled burrito in the pan with hot oil and fry for around 30 seconds to a minute on each side until nice and browned all around

  • Transfer to a plate and pour queso over the whole thing and enjoy! 

    • You can also keep the queso as a side and dump it over each bite

    • You can also put the queso inside the burrito for better on the go action 

    • You can also omit the queso altogether.
