Chimichurri Salmon with Sweet Potato Fries and Sriracha Mayo
Chimichurri Ingredients:
1 bunch cilantro
1 bunch parsley
1 bunch fresh oregano
¼-½ cup Red wine vin
Red pepper flakes to taste
2-5 cloves Garlic
¼-½ cup Olive oil
Salt to taste
Sweet potato fries Ingredients:
Sweet potatoes
Oil
Salt
Pepper
Paprika
Onion pow
Garlic pow
Sriracha Mayo:
Mayo
Sriracha
Instructions:
Blend all the greens and garlic in a food processor until partially mixed
Add the red wine vinegar and the olive oil in equal parts until you like the consistency
I like mine fairly thick but I know others that like theirs thin with vinegar and others thin with oil so do what you like!
Add red pepper flakes and salt and pulse until well mixed and tastes to your liking
Don't forget that this is YOUR food, don't put as much or as little salt or pepper flakes as me if you don't like salty or hot food.
Set aside while doing remaining things
Wash and debone fish of choice (I used salmon) and pat dry
Put chimichurri over fish liberally and decide if you are going to bake the fish or grill it outside on the BBQ or on a cedar plank or whatever you’re going to do.
I decided to bake mine at 400* for 15-20 mins depending on how thick the fish is
Preheat oven to 400*
Peel and cut sweet potatoes into pieces no thicker than ¼” and around 4” long.
You WILL have some shorter pieces from the ends and that’s okay.
There are two ways to do the oil/seasonings
Put all of the pieces into a gallon size bag and add oil in small increments until all the pieces are well coated. In a small dish add about a teaspoon of all the seasonings and mix until well incorporated and then add to bag and toss around until they appear evenly seasoned
Put all pieces on a lined baking sheet and drizzle oil over the pieces, then sift seasonings one by one over potatoes and mix in the tray with your hands until they look well coated and seasoned to your liking
Bake for around 20-30 minutes depending on how many you have in the pan. They will appear lightly browned and may even blacken just a tad on the smaller pieces and that is when you know they are done.
While everything is baking mix mayo and sriracha together in a dish until you like the ratio and set aside for fries
Dish up and enjoy!
