Vegan Queso

Ingredients: 

  • 1 Sweet potato

  • 1 Hot pepper of choice, I used poblano but jalapeno or a hotter pepper would work too

  • 1 Red onion (½ if it's really big)

  • 4-5 Garlic Cloves

  • 1 cup Cashews 

  • Salt

  • Pepper

  • Onion pow

  • Garlic pow

  • Cayenne (optional if you don’t like spice)

  • Chili pow (optional) 

  • Olive oil 

  • ¼ cup Nutritional yeast

  • 1 cup Water 

  • Boiling water 

Instructions: 

  1. Preheat oven to 400* 

  2. Skin and cut up sweet potato, pepper, onion, peel garlic and put in pan whole

  3. Put a drizzle of olive oil over the veggies and add a sift of each of the spices

  4. Roast for 20-30 minutes depending on how big of pieces you cut them into

  5. Pour boiling water over cashews and let sit for the duration of the time that the veggies are roasting but at least 10 minutes then drain and put into a blender. 

  6. When everything is done roasting put the sweet potato and garlic into the blender with the cashews. 

  7. Add nutritional yeast to blender and blend until completely smooth. 

  8. Cut up pepper and onion into small pieces and add to queso that comes out of blender (option to just put these in the blender to not have a chunky queso)

  9. Salt and pepper to taste
